Winter Fruit Salad

This winter fruit salad is a visually stunning dish that is full of seasonal fruits and colors. It’s Paleo, vegan, and perfect for your holiday table!

Happy December! I’m so excited that December has arrived, especially since it has finally cooled down where I live. In fact, it was so warm (mid-sixties) yesterday that I wore shorts! That is not okay.

Nevertheless, it is cold now and I am so pumped about it. Cold means an abundance of jackets, scarves, and hot cocoa, which are three of my favorite things!

Speaking of hot cocoa, I thought I might mention that I’ve been “off coffee” for about two weeks. As you can see in past “my day in meals” posts, I normally start my day off with one cup of coffee (never more than that!). However, I recently started to feel groggy in the afternoons, so I decided to quit coffee to see if it would help. It did! I’ve been drinking a lot of tea (matcha and chai are my favorites) and Paleo hot chocolate recently, and I haven’t had any issues with afternoon slumps.

The one time I did have coffee (it was an almond milk peppermint mocha from Starbucks), I was jumpy all afternoon & I couldn’t fall asleep until 1 AM! To be fair, I probably finished my coffee at about 4, and I didn’t eat enough that day . . . so the coffee wasn’t the only culprit. Still! I’ll probably stay off coffee for a while, but I’ll start re-introducing it in small portions . . . in the mornings, not the afternoons.

Soooo . . . this winter fruit salad! It’s chock-full of persimmons, pomegranate arils, and kiwi (which, if you didn’t know, is basically like candy in fruit form). The “dressing” is the simplest thing you could ever throw together: just a sprinkle of fresh mint, a squeeze of honey or agave, and a splash of fresh lime juice. Then toss it all together and you’re good to go!

My main source of excitement from this recipe was just the appearance. This is the prettiest salad I think I’ve ever laid eyes on, and it’s delicious to boot! Plus, it’s pretty darn healthy. Let’s break down the ingredients!

Pomegranate arils: look like jewels / high in antioxidants and Vitamin C

Kiwi: Beautiful star pattern & green hue / high in Vitamins C and E

Persimmon: I mean, have you ever seen such a cool-looking fruit?! / High in phytonutrients and flavonoids

The best thing about this winter fruit salad is its variance in flavors, textures, and colors. The bright acidity of the kiwi pairs perfectly with the tanginess of the pomegranate and the subtle sweetness of the persimmon. Plus, it really is perfect for Christmastime. Red and green, right?!

  1. De-seed the pomegranate. See notes for description.
  2. Cut the persimmon and kiwi into slices of desired size. Toss all the fruit together in a large bowl.
  3. Make a chiffonade with the mint leaves by stacking them, rolling them into a tight bundle (like a burrito), and slicing thinly with a sharp knife. Sprinkle the mint into the bowl with the fruit.
  4. Juice the lime directly over the fruit. Add the honey or agave and toss so that each piece of fruit is evenly dressed. Serve.
