Add the cauliflower, garlic, onion, 1 tablespoon of the sesame seeds, cumin, egg, coconut flour, and salt and pepper to a blender. Blend until smooth.
Remove the falafel mixture from the blender. Stir in the remaining sesame seeds, parsley, and cilantro. Chill the mixture for 5-10 minutes to make it easier to handle.
Meanwhile, heat up a pan with a fair amount of coconut or olive oil over medium heat.
Form patties with the falafel mixture and saute them. Make sure you have enough oil in your pan, as these are liable to stick.
Once each falafel finishes cooking, carefully transfer them to a lined baking sheet (they are fragile). Bake them in the preheated oven for about 20 minutes, or until they are firm and slightly crunchy on the outside.
