Watermelon Salad

It is way too hot to hang out in the kitchen this summer, so I’m sharing a no-cook recipe for refreshing Watermelon Salad! This salad has watermelon (wait, really? no duh!), red onion, mint, strawberries, and so much more! It’s the perfect summer side dish that takes just a few minutes to make!

To me, watermelon is the hallmark of summer. It’s the most quintessential summer fruit I can think of, and it’s synonymous with July 4th & hot days & barbecues. Although unadulterated watermelon is one of the best treats out there, this watermelon salad is a delicious way to dress the fruit up a bit!

Does anyone else love watermelon and mint together?! I think it’s one of the best combinations ever, especially with a tiny bit of lime juice! Add some cucumber noodles (they’re pretty, why not?!), strawberries (for extra fruitiness), and almonds (for crunch), and you’ve got yourself a first-rate salad!

PSA: The hardest part about making this salad is cutting up the watermelon. Cutting watermelon scares me because I’m afraid of slipping and chopping my hand off. If I cut my hand (or even my finger) off, my life would be over. No photography, no piano, no clarinet, no writing/drawing, no fun. 🙁 I’ve already had a few incidents with a mandoline slicer, so I’m extra careful in the kitchen now. You should be too!

Okay, on to more interesting subjects. I mentioned in my newsletter (are you subscribed? you should be!) on Saturday that I’m going to do the September Whole30, but I changed my mind. I’m doing one now! It’s kind of abrupt, but I felt like I needed a reset, and I’m still trying (slowly but steadily) to find my “Food Freedom.” To keep myself accountable, I decided to dive right in and start my Whole30 ASAP. Since I’m starting today, I should end right before school starts. (Ew, school.)

This watermelon salad is not Whole30 due to the honey/agave in the dressing, but I think it will still be delicious without the added sugar. Instructions
  1. Toss the watermelon cubes with the cucumber noodles, red onion, and strawberries.
  2. Whisk the apple cider vinegar, lime juice, mint, and honey until smooth.
  3. Pour the dressing over the salad and toss to coat. Sprinkle with sliced almonds, if desired, and serve.
