Vegetarian Sweet Potato Tacos
  1. Dice the onion finely and saute it in a saucepan with a few tablespoons of olive oil.
  2. Once the onions are translucent, add the mushrooms and zucchini. Cook until the mushrooms and zucchini are soft and all excess water has evaporated.
  3. Dice the sweet potato into cubes and par-cook them in the microwave (2-3 minutes, covered).
  4. Add the sweet potato to the saucepan and cook until they are crispy.
  5. Add the spices and salt & pepper. Taste and adjust seasonings as needed.
  6. Serve with lettuce, tortillas, or alone! (An egg would be good too!)
