Vegetarian Sweet Potato Tacos

These Vegetarian Sweet Potato Tacos are to die for! They’re super easy and flavorful, and everyone is sure to love them . . . especially you, the chef! My goal on this website is to share super easy, healthy, AND delicious recipes (that people will actually want to make). This recipe ticks all of the boxes!

To make these Vegetarian Sweet Potato Tacos, I cooked everything together in a skillet. If you eat corn or flour, feel free to use tortillas made from either. If not, lettuce works great! You can also forego the tortilla entirely and just eat this plain. And if you have a weekly allowance of more than $15 (AKA you’re not in college), you should try some Siete tortillas! I’ve never had them, but they look great. 🙂

As you can probably tell by the day/time I’m publishing this recipe, there probably won’t be another one this week. I will, however, send out my newsletter this Saturday (if everything goes according to plan)! There’s been a recurring theme in my recent blog posts: I’m always “super busy” and don’t have time to post twice a week anymore . . . which is true. I don’t want to whine about all of my responsibilities, but I do want to explain why I don’t have time. My blog posts have been pretty dry recently because I don’t have anything to say other than “I’m busy” haha. I hope you find all of this interesting!!

Obviously, school takes up a lot of my time. I took some of the hardest (or at least, most time-consuming) classes possible this year. I’m enrolled in AP Chem, AP Bio, AP Gov, AP Research, and AP English Lit/Comp. Each of these classes piles on so much homework that I barely have time for other stuff. (For reference, I’m writing this post at 12:04 A.M.) So far, senior year has been super fun and easy and totally relaxing.

Too much sarcasm?

In AP Research, I’m conducting an experiment that involves DNA damage stress on yeast cells. It’s much more complicated than I originally thought. In fact, the experiment will take about two weeks to run. I’m actually starting it this Friday, so it’ll be great to get it out of the way! I’m super lucky to have help from my AP Biology teacher, who has a PhD and actually knows what she’s doing. That being said, I have done a lot of research on the topic & I have a pretty solid grasp of what I’m doing. 🙂

I’ll explain the rest of my responsibilities in the next blog post! (Yes, I have more than school lol.) Until then, let’s just lounge around and eat Vegetarian Sweet Potato Tacos (and not do homework). That sounds like a good life to me . . . I’d even consider being vegan or vegetarian for a few days if I could eat these Vegetarian Sweet Potato Tacos regularly. 🙂 If you’re a meat eater, I’m sure these would be great with sausage and/or an egg.

Instructions
  1. Dice the onion finely and saute it in a saucepan with a few tablespoons of olive oil.
  2. Once the onions are translucent, add the mushrooms and zucchini. Cook until the mushrooms and zucchini are soft and all excess water has evaporated.
  3. Dice the sweet potato into cubes and par-cook them in the microwave (2-3 minutes, covered).
  4. Add the sweet potato to the saucepan and cook until they are crispy.
  5. Add the spices and salt & pepper. Taste and adjust seasonings as needed.
  6. Serve with lettuce, tortillas, or alone! (An egg would be good too!)
