Hi everyone! Thanks for reading today’s post, which I almost didn’t finish!! I managed to squeeze it in tonight inbetween band, cross-country, and homework. Thankfully, I don’t have zero hour (6:30 AM rehearsal) tomorrow, so I have a little extra time to sleep! Now I have an extra hour to get stuff done, which is such a relief. I really want to keep up with my blog and all of you guys, but it’s not easy. School is kicking my butt right now — I have three huge tests in the next ten days — and I have to prioritize my studies. I don’t want to make my blog a space for ranting and pity parties, but I want to make sure you all know that the posts have been sparse because I’m busy, not because I’m lazy.
Ok, enough of that! I’m so excited to share this recipe with you all, because it’s really really good. Cauliflower’s definitely not what you’d call “meaty,” but it is more . . . um, toothsome than spinach, celery or another watery vegetable. It’s the perfect meat substitute in this dish! I chose to make this Vegetarian Cauliflower Stir-Fry because I wanted to see how cauliflower would stand up in a stir-fry. The verdict (as you can probably tell because you’re reading this post) is that cauliflower is great in stir-fries! Whether you’re a vegetarian or not, I’d recommend you try this recipe!

I am aware that this Vegetarian Cauliflower Stir-Fry is not exactly the most autumnal recipe, but it is still SO delicious! It’s definitely worth making at any point during the year.
