  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Mix all of the “chorizo” spices and the olive oil in a large bowl. Add the carrots and toss to combine. Spread the “coins” on a parchment-lined sheet pan and bake in the preheaded oven for 20 minutes.
  3. To prepare the tacos, spread some of the dairy-free cheese dip on one tortilla. Add a scoop of carrot “chorizo,” a sprinkle of lettuce, a little tomato, and a few slices of avocado. Serve and enjoy!
