Vegan Carrot Chorizo Tacos

These Vegan Carrot Chorizo Tacos are a delicious, meat-free alternative to traditional tacos! They are super simple, so they’re perfect for every occasion. Not only are these tacos delicious and easy, they are also healthy! They are bean-free, dairy-free, meat-free, nut-free, and even grain-free (if you use grain-free wraps). These Vegan Carrot Chorizo Tacos are so full of flavor, you’ll never miss the meat!

I don’t know about the rest of you, but I always miss Taco Tuesday. Every time I eat tacos, I look at the calendar and discover that it’s Monday . . . or a Thursday . . . or a Saturday. Luckily, I love tacos — so I could eat them any day of the week! These Vegan Carrot Chorizo Tacos are good enough to eat every day, in my opinion. I didn’t expect too much from them during testing, but they exceeded my expectations! I love meat, so I couldn’t believe the carrot “chorizo” was so good!

To make the carrot chorizo, I simply coated carrot pennies with spices and olive oil. Then, I baked them until they were soft all the way through, but just a little crispy on the edges. These carrots are the “meat” of the tacos. I loaded them up with lettuce, tomato, avocado, and my vegan “cheese” sauce. I have to say, this sauce makes the dish. What are tacos without cheese? Lame, that’s what. The vegan cheese is the perfect solution to the dairy dilemma, and it even it binds  the veggies together inside the tortilla.

Of course, you can add whatever you want to these Vegan Carrot Chorizo Tacos. If you’re not a fan of vegan “cheese” sauce (although I don’t know why on Earth you wouldn’t be), use real cheese! You might use lettuce wraps or, my personal favorite, bell pepper halves instead of tortillas if you’re on a Whole30. If you’re a meat lover, you might even add meat into these tacos! That would be really good . . .

Instructions
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Mix all of the "chorizo" spices and the olive oil in a large bowl. Add the carrots and toss to combine. Spread the "coins" on a parchment-lined sheet pan and bake in the preheaded oven for 20 minutes.
  3. To prepare the tacos, spread some of the dairy-free cheese dip on one tortilla. Add a scoop of carrot "chorizo," a sprinkle of lettuce, a little tomato, and a few slices of avocado. Serve and enjoy!
