This Taco Spaghetti Squash Casserole is Whole30, but it has all the flavors of a classic taco! Obviously, you wouldn’t mistake this for a real taco . . . I wouldn’t lie to you. However, I also won’t lie when I say I love this casserole! It’s made up of (mostly) vegetables, which is why I don’t feel bad about eating all of it in a day. Spaghetti squash is pretty low in carbs, so this casserole great if you’re trying to cut down on starchy foods.

If you (like me) are not giving up carbs in the new year (never!!), don’t worry. You can eat this AND have potatoes on the side. 😉

One of my goals for January was to do another Whole30, but I decided against it last week. This would be my fifth Whole30, and I think I’ve gotten what I need from the program. My new goal this month is to practice intuitive eating! I think another Whole30 would be more restrictive than liberating at this point, and I’m not sure it would help me get any closer to my “Food Freedom.” I’ll probably do a few weeklong Whole30 resets and try to avoid the things that bug me the most (sugar, dairy, and corn). However, I won’t bother depriving myself of things I know don’t bother my stomach (gluten-free pasta, peanut butter, hummus, etc.).

Although I won’t be eating strictly Whole30 this month, I’ll still focus on vegetables and super healthy foods! This Taco Spaghetti Squash Casserole is a great example, because it only contains vegetables, meat, eggs, and spices! It’s “squeaky clean” and chock-ful of veggies. I love topping it with salsa, fresh tomatoes, and avocado. Cheese would also be delicious, although it’s not Paleo or Whole30 OR vegan . .. . but you know what they say — treat yoself (unless you’re lactose intolerant lol).

Instructions
  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Heat an oven-safe skillet over medium heat. Cook the onion and garlic in 1 tablespoon of the coconut/olive oil until the onions are translucent. Add the green chile and the green bell pepper and cook until the vegetables have softened.
  3. Add the ground beef to the pan. Cook until no pink remains.
  4. Add the spices to the pan and mix thoroughly. Remove the pan from the heat and add the mayonnaise.
  5. Remove the threads from the spaghetti squash and mix them with the ground beef and vegetables.
  6. Add the eggs and mix thoroughly. Use a spatula to spread the mixture out evenly.
  7. Bake the casserole in the preheated oven for 45 minutes
