Instructions
  1. Saute the onion, celery, and garlic in a drizzle of olive oil over medium heat for just under five minutes, or until translucent.
  2. Add all remaining ingredients but walnuts and cranberries. Cover and cook on medium heat for 5-10 minutes, then uncover and cook until all water or broth has evaporated.
  3. Add the walnuts and cranberries. Season to taste with salt.
