Although most of my friends and family love stuffing, I’ve never really been a fan. My logic is that if I’m going to fill up on carbs at Thanksgiving, I may as well eat potatoes. . . . Then along came this recipe! It uses “riced” sweet potatoes as a bread substitute. GENIUS. Who likes soggy bread crumbs, anyway?

This recipe turned out much better than I thought it would be! Honestly, I expected it to flop — but it didn’t! Then again, how can you go wrong with sweet potatoes, cranberries, and walnuts? Um, you can’t.
Not only is this sweet potato rice stuffing even tastier than regular stuffing, it’s way healthier! Replacing bread with vegetables is always a good idea. This recipe has a ton of veggies and nutrients, so it’s much more nourishing than traditional stuffing. It’s also relatively simple to make, which is one less thing to worry about on Thanksgiving Day.

I am actually having a bit of a non-traditional Thanksgiving with my family. We’re having paella, wild-rice stuffed acorn squash (from the Half Baked Harvest Cookbook), and some other fun treats. I’m so excited!
