Sweet Potato Fries with PB Dip

These Sweet Potato Fries with PB Dip are easy, delicious, and perfect for a crowd! They’re great for holiday parties, and everyone will love them. Even though sweet potatoes and peanut butter aren’t typical holiday flavors, this is a perfect dish for the season!

I know sweet potatoes and peanut butter sounds like a weird flavor combination, but it’s actually delicious! Peanut butter is especially good when blended with dates and cinnamon, and it becomes the perfect consistency to dip sweet potato fries. You could also dip apple slices if you like. In fact, most fruits (and some vegetables, like celery) would taste great with this dip!

Although other foods taste great with this dip, I think sweet potato fries taste the best. To make mine, I used the same technique as I did to make these Crispy Baked Sweet Potato Fries. All I did was switch up the spices!

Last week was a nice break from school and sleeplessness, but now things are back to normal. On the bright side, I only have three “real” weeks before finals and the end of school! It’s kind of weird to think that I only have one semester of high school left. I’m not really sad about it, though. 🙂

Next semester, I’d love to do more lifestyle posts — I’ve been slacking on that front since about August. 🙂 What types of posts would you all like to see? I’m thinking of more workout posts, bullet journal posts, and maybe some fun photography stuff. Let me know if you have any ideas!

I guess we’re kind of in this weird in-between stage where everyone wants to be sloth-y and sleep all day . . . but we can’t because there’s still a month until Christmas. 🙁 This recipe sort of reflects that weird in-between mood (mostly because I meant to post it before Thanksgiving and ran out of time). Rest assured, we’ll have more “winter-y” recipes after this week!

Instructions
  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Slice the sweet potato into matchsticks. Microwave the matchsticks for 2-3 minutes.
  3. Toss the sweet potato with the coconut oil, cinnamon, and chili powder.
  4. Bake the fries in the preheated oven for 15 minutes (or longer, if needed).
  5. While the fries cook, prepare the fries. Heat about 1 cup of water until steaming and soak the dates for about 5 minutes.
  6. Drain the dates. Blend them with the remaining dip ingredients in a food processor or blender until smooth. Add more almond milk as necessary to achieve desired consistency.
  7. Transfer the dip to a bowl and the fries to a plate. Serve!

Feel free to use another type of nut butter if you can't eat peanuts!
