I had SO much fun making these breakfast pizzas! I’m so happy that I finally made them, because I’ve wanted to make breakfast pizzas for ages!
There are some cooking days that I just dread because my recipes are long or time-consuming. This is not one of those recipes! I probably finished these in thirty minutes flat . . . including photos. That’s really fast for me; I typically budget about an hour per recipe! My point here is, if I made and photographed these sweet potato breakfast pizzas in thirty minutes, imagine how fast you could make them without taking photos! Speaking of photos, I am incredibly pleased with these! I think the wrinkled white background (it was parchment paper) really offset the pizzas nicely. Plus, there are some foods that just look beautiful on their own, you know? I barely had to style these. They basically styled themselves!

To make these sweet potato breakfast pizzas, whip up a quick-and-easy sweet potato crust; it’s nut-free thanks to coconut flour! Then, add your desired toppings. I chose cream cheese (use dairy-free if needed), tomatoes, spinach, and an egg. You could use any toppings you want, but an egg is a quintessential breakfast food (and it makes these pizzas vegetarian).
