Summer Berry Breakfast Smoothie Jars

Although summer break is coming to a close, summer produce is still in stock! These Summer Berry Breakfast Smoothie Jars celebrate all the delicious fruits of summer, and they are very easy to make. If you’re in a summery mood, whip up these Paleo and vegan smoothie jars to start your day!

When I made these smoothie jars, I didn’t expect them to taste very good. For some reason, I have this expectation for all of my recipes . . . it’s kind of a fail-safe in case they actually turn out badly; it’s not disappointing. On the happy occasions when the recipes turn out well, I’m so happy! These Summer Berry Breakfast Smoothie Jars were one of those happy occasions.

The smoothie part of these jars alone is to die for . . . it’s just frozen bananas, frozen cherries, and coconut/almond milk, but it tastes like ice cream! Then, I layered the smoothie with coffee chia pudding. I know it sounds like an odd combo, it hear me out. The slight bitterness of the coffee balances perfectly with the sweetness of the smoothie, and the chia seeds add great texture to the overall dish. I also added almonds and fresh fruit to the mix, but both are optional!

I’ve shared a few chia pudding recipes before (see these two Whole30 chia pudding recipes and these Chunky Monkey Chia Parfaits), but this one is unique in that I mixed it with a smoothie. Because it’s in a jar, it’s a great portable meal. After you screw the lid on, your breakfast is all ready to go! It’s full of nutrients and antioxidants, and the protein in the chia seeds and almonds will keep you full for hours.

Obviously, this recipe is Paleo, but it’s also vegan and Whole30! You can make it nut-free, too, by taking out the almonds. (I suggest using hemp seeds or coconut flakes as a substitute.)

I start school next week, which is sad because I feel like this summer went by so fast! We didn’t even go out of town because we were so busy. ); I’m not dreading this year *too* much, because I’m excited to take classes I’m actually interested in. The problem is, most of those classes are AP. I’m going to try to keep up with the blog this semester, but know that I may have to cut back to one post per week for a while.

Instructions
  1. To make the chia pudding, mix the hot coffee, almond milk, and coconut milk together. Add the maple syrup and stir to combine. Add the chia seeds and mix thoroughly. Once the mixture is homogeneous, mix in the cocoa powder.
  2. Chill the chia pudding in the fridge and stir every 15 minutes or so to prevent clumping. After 30 minutes, the pudding should be done (the seeds gel up faster due to the hot coffee), but you can soak it overnight if you so choose.
  3. Meanwhile, blend together all the smoothie ingredients until smooth. If you would like more protein in your smoothie, add your favorite protein powder.
  4. Layer the smoothie and the chia pudding in a jar. Layer in fresh cherries and strawberries (or other berries) and almonds as desired. Serve and enjoy!
