These popsicles are summer on a stick!

With one bite, you’ll be transported to a tropical island full of swaying palm trees and all the pina coladas you can drink. If only you could actually afford to go to a tropical island whenever you want . . .

For now, these strawberry pina colada popsicles will be your compromise.

Also, they are only THREE ingredients, which means you can demonstrate the epitome of summer laziness while making these. The steps are just as simple as the ingredients: blend, pour, freeze. Then, an hour or so later . . . POPSICLES!

Pro tip: You can also toast some coconut and sprinkle it over your strawberry pina colada popsicles for an added dash of beach-y summer feels. Toasted coconut is pretty much the best thing ever, yeah? Yeah.

If I were you, I’d take the extra three and a half minutes (five seconds longer and your coconut will go from perfectly golden to coal black — if you’ve ever toasted coconut before, you get me) to toast some coconut shreds or flakes.

Pro tip, the sequel: if you’re looking for an easy smoothie but you forgot to freeze your bananas (this has happened to me and it’s the WORST!), just throw one of your strawberry pina colada popsicles (sans stick, obviously) into your blender along with a fresh banana. Then, turn your blender on and *POOF* you have a pina colada smoothie. Cool, right? Right.

Another great thing about the simplicity of these popsicles is how they fit into pretty much every diet. They’re paleo, gluten-free, dairy-free, grain-free, soy-free, legume-free, nut-free, autoimmune-friendly, vegan, vegetarian, and even Whole30 . . . although they’re kind of dessert and therefore considered SWYPO. Sooooo they’re actually not Whole30. *cries*

If you’ve never processed a whole pineapple, I highly recommend doing so for these strawberry pina colada popsicles. Pineapple is just SO. GOOD. when it’s fresh. I followed this tutorial here, and it was crazy easy! Doing it yourself is definitely worth it, but I won’t tell anyone if you use pre-cut pineapple from the frozen section. 😉 If you’re reading this blog, we’re basically best friends. And best friends don’t spill each other’s secrets!

Speaking of secrets, I’ll tell you that I might like these popsicles even more when they’re blended into smoothie form. What can I say, I’m a smoothie fanatic! You will be too, after you make these!

Instructions
  1. Blend the pineapple and coconut until smooth.
  2. Stir strawberry slices into pineapple mixture.
  3. Divide the popsicle mixture evenly between popsicle molds.*
  4. Freeze until solid.
