  1. Preheat your oven to 400 Fahrenheit. Clean the sweet potatoes thoroughly and prick them all over with a fork. Wrap them in aluminum foil and roast them for 60 minutes.
  2. While the sweet potatoes are roasting, prepare the sloppy joe filling: sauté the onion, bell pepper, and garlic in a large skillet (I prefer cast-iron) over medium heat until the onions are translucent. Add the meat and cook until it is no longer pink.
  3. Meanwhile, prepare the sauce: combine all sauce ingredients in a blender or food processor and blend until smooth, scraping down the sides if necessary.
  4. Once the meat is no longer pink, pour the sauce into the skillet and reduce heat to medium-low. Simmer for 5-10 minutes, or until the mixture is thick and saucy.
  5. To serve: slice the sweet potatoes open and fluff the flesh with a fork. Create a small cavity inside the potato, and remove some flesh if necessary. Ladle a fourth of the meat mixture into the sweet potato. Serve with a crackle of black pepper, lettuce, tomato, and cheese (optional) for non-Whole30 or Paleo.

* Can substitute other ground meats, such as turkey.

** If not using a high-powered blender or food processor such as a Vitamix, soak dates in boiling water for 1-3 minutes, until soft. (Time varies depending on softness of date)
