Cook the chicken over medium-high heat in a bit of olive oil until partially cooked.
Add the ginger and garlic and cook until fragrant.
Add the broccoli, reduce heat to medium, and cook until broccoli has partially softened.
Add mushrooms, cook for 1 minute, and add green beans. Cook for 1-2 minutes.
Scoot all of the vegetables and chicken to the edges of the pan to make an open space in the middle. Whisk together all of the sauce ingredients and pour into the well. Let the sauce cook, undisturbed, until bubbly (about 30 seconds).
Stir everything together and serve over cauliflower rice, real rice, spinach, or as is. Enjoy!
