Roasted Cauliflower Rice Meal Prep Bowls are delicious and easy!

I’d like to declare these Meal Prep Bowls the epitome of easy fall dinners. I mean, you could definitely make these any time of the year if you wanted to . . . but something about the spiced cauli-rice and the crispy sausage just screams autumn to me. Plus, this dinner is perfect for busy fall nights when you don’t have time for ANYTHING but eating and sleeping. Anyone else have this problem? For me, fall is the busiest (and best) season of the year, so meals like this are great to have. All you have to do is season the rice, add some onions & sausage, and arrange everything on a baking sheet. Then, you can eat it right away or pack it with spinach for lunches all week!

Personally, I’m a big fan of meal prep . . . but I don’t do it often enough. My school lunches normally consist of leftovers from dinner the night before, so I don’t always have to cook ahead of time. Still, there are some days when I run out of food and I’m left wondering what to eat. When this happens, I turn to my trusty sweet potato & egg hash, which I probably eat upwards of five times per week. Nope, I’m not joking. If you watch my Instagram stories, you know this is true. đŸ˜‰ Speaking of which — so many of you have requested the recipe after seeing me eat my go-to breakfast hash, so I finally photographed it for you yesterday!

But we’re not talking about sweet potato hash today. We’re talking about Roasted Cauliflower Rice Meal Prep Bowls! These bowls are:

  • Paleo, Whole30, nut-free, and plant-based
  • Low-carb
  • Extremely flavorful (read: not boring!)
  • Easy . . . think dinner in 20 minutes kind of easy!
  • Perfect for make-ahead lunches

Meal prepping is a great way to stay on track with any sort of diet or lifestyle. When you have meals prepared ahead of time, you are less likely to overeat because your pre-portioned food is all ready to go! I’m not a fan of calorie counting or restricted portions — I think we should listen to our bodies and eat according to how we feel — but having food ahead of time means you’re less likely to fill up on snacks. So what I’m saying is . . . these Roasted Cauliflower Rice Meal Prep Bowls will make your life easier and healthier. đŸ™‚

On a completely unrelated topic, I’ll be posting again this week on Friday, not Wednesday. I’m trying to take more time off from work and school so I can relax, which means I’ll be pushing this week’s second post back a bit. I’d encourage you to do the same — take a bit of time to breathe this week! Even if it’s just fifteen minutes, it’ll help you be more productive when you get back to work. I promise.

Instructions
  1. Preheat the oven to 350 degrees F.
  2. Toss riced cauliflower with spices and salt. Add the coconut or olive oil.
  3. Spread the "rice" on a large rimmed baking sheet. Dice the onion into small wedges and arrange them on top of the rice.
  4. Sprinkle the sausage over the rice and onions, if using ground sausage. If using sausage links, slice the links into coins and arrange them on top of the rice and onions.
  5. Bake in the preheated oven for 35-40 minutes, or until the sausage is crispy and the rice is cooked through. Serve over spinach.
