Raw Snickers Banana Bites

If you’re looking for an easy summer recipe, these Raw Snickers Banana Bites are for you! They’re super refreshing (like ice cream!), but they’re raw, vegan, and Paleo. I really enjoyed making these, and I know you will too — they’re almost as much fun to make as they are to eat!

These Raw Snickers Banana Bites are some of the most addicting things I’ve ever made for the blog. In fact, I think the only recent recipes that are more addicting are the Paleo Chicken Nuggets and the Cauliflower Gnocchi. Now that I think about it, all three of these recipes are a similar shape and size. That makes them super easy (too easy, probably) to eat!!

The base of these Raw Snickers Banana Bites is, obviously, bananas. I sliced a banana into “coins” and topped them  with a delicious date-peanut butter mixture that is to die for! Of course, you can use any type of nut butter you want. I used peanut butter because it tastes amazing — and original Snickers have peanut butter, after all. If you’re allergic to peanuts or you follow a super strict Paleo diet, just use a different nut butter!

After I froze the bananas for a few minutes, I finished them up with a walnut and a drizzle of coconut oil “chocolate” (which is just equal parts of melted coconut oil and cocoa/cacao powder). Then, I froze everything one more time. The frozen banana has the texture of an ice cream bar. The peanut butter-date mix is kind of a cross between caramel and nougat.

In other news, I’ve been back at school for a week and I’m already exhausted!! I mean, it’s fine . . . I knew this year was going to be hard, so I’m not that surprised or disappointed. My course load is pretty heavy, which is okay because I’m taking some classes that I’m really excited about (mainly AP Chem, AP Bio, and AP Research . . . and AP English and AP Econ/Gov . . . so all of my classes haha). The only not cool part about all of my classes is the eight hours of homework I did last Saturday 🙁 or the time I got four hours of sleep because I was working so late. It’s okay though!! Positive vibes!!!! <– I’m just going to keep saying it until I believe it haha 😉

Instructions
  1. Blend all of the date caramel ingredients until smooth,
  2. Slice the bananas into thick coin shapes. Top with a dollop of caramel and freeze for 5-10 minutes.
  3. Melt the coconut oil in a microwave-safe bowl. Then, add the cocoa powder and stir to combine to make freezer chocolate!
  4. Pour the freezer chocolate over the bananas and then add the walnuts, or add walnuts and drench the whole thing in freezer chocolate. Freeze until everything is solid. Enjoy!
