Raspberry Almond Butter Chocolate Bark

I’m not a hard-core Valentine’s Day fan, because I’m single (and busy . . . who has time for all that stuff when there’s homework to do?!). I am, however, a hard-core chocolate fan. I made this raspberry almond butter chocolate bark  in December, before my Whole30. It’s delicious!

This bark is equal parts simple, healthy, and tasty. The chocolate base is a mere two ingredients: coconut oil and cocoa/cacao powder. The almond butter swirl is beautiful and, more importantly, yummy. Finally, the freeze-dried raspberries are tart and crunchy! The whole thing is super easy!

I would make a batch of this to eat by myself. No joke. Chocolate, almond butter, and raspberries are totally my thing. Plus, the only added sugar in the whole recipe is in the almond butter drizzle — and it’s optional! This would still technically be a dessert without the sweetener (so not Whole30), but it would be sugar-free! I like my chocolate dark, which is why I didn’t sweeten the base layer. You can add some sweetener if you’d like, though. The raspberries add kind of an intense hit of sweetness to the top, so they balance out the bitterness of the chocolate.

The other great thing about this Raspberry Almond Butter Chocolate Bark is how pretty it is. Make it for your sweetheart to show them how much they mean to you! Nothing says “I love you” like a homemade treat . . . especially if you promptly devour the whole batch after you deliver it. 😉 That sounds like something I would do.

To add the pretty almond butter swirls you see in the photos, I just drizzled the almond butter in vague lines and then dragged a toothpick through them in the opposite direction. Done! Don’t feel bad if you mess up; you can cover any mistakes with extra raspberries and almonds.

Instructions
  1. Melt the coconut oil in a microwave or over boiling water. Whisk in the cocoa powder until no lumps remain.
  2. Line a small baking sheet with parchment paper. Pour the coconut oil mixture over the paper.
  3. Mix the melted coconut oil, almond butter, and maple syrup together until smooth. Drizzle the almond butter mixture over the cocoa-coconut oil base. Swirl the almond butter around with a toothpick.
  4. Sprinkle the raspberries over the top. Freeze the whole dish for at least 20 minutes, or until solid.
