Heat the sesame oil (for the Pad Thai) in a skillet over medium heat. Add the sweet potato noodles and cook for a few minutes, until slightly softened. Add the beet noodles and cook for another few minutes.
Mix all of the sauce ingredients together in a separate bowl.
Slice the bell peppers finely and add them to the skillet. Remove the skillet from the heat and add the cucumber noodles.
Pour the sauce into the skillet and toss to mix. Top with cilantro and peanuts/cashews.* Enjoy!
Peanuts are a nice substitute for cashews if you cannot eat nuts.
