Summer calls for lots of yummy grilling recipes, which is why I’m sharing these Pork Skewers with Apple-Ginger Salsa! They’re super simple, but they’re also full of flavor! If you need a fast, easy recipe for a barbecue, this dish is for you!
Although this is a Paleo food blog, at least a half of my recipes are vegan/vegetarian . . . not because I am vegetarian, but because I hate cooking meat! I can’t stand the smell of raw beef, and raw meat just grosses me out in general. Accordingly, I felt very accomplished when I cooked this recipe! (It was actually really easy.) Not only is it a main dish (I am to have a certain number of those on my blog), it is low-carb and Whole30! Double whammy!
These Pork Skewers with Apple-Ginger Salsa are also really pretty! I love the contrast (flavor-wise and color-wise) between the red bell peppers and the onions. Of course, the grill marks are beautiful too.
I have a confession to make — I didn’t actually grill these! I cooked them in a hot skillet on my cooktop. You can do the same, and have grilled food without a grill! If you would prefer to grill them, you can easily experiment with a real grill. Unfortunately, I can’t help you there since I’m not a certified GrillMaster like my dad. 😉
p.s. The salsa part of these Pork Skewers with Apple-Ginger Salsa is my favorite!! It’s so flavorful and versatile. In fact, I put it on top of other meats once the skewers were gone, since it makes extra!
In other news, I go back to school in exactly two weeks and I am so so so sad. I actually love school (kinda, minus the stress eek!!) because I generally enjoy my classes and I enjoy seeing my friends. However, I feel like this summer was crazy short! I had one week of vacation (although we didn’t go out of town) before I started work and Summer PE. After PE ended, my German exchange student came in and work continued. Once work ended, band started . . . and now we’re here.
