sweet potato
spiralized into noodles

coconut or olive oil

red chili flakes

teaspoon
garlic powder

Italian seasoning
herb mix

tomato paste

tablespoons
water

kale
chopped, washed, and de-stemmed

pepperoni

Instructions
Sautee the noodles in the olive/coconut oil, covered, until soft. Add 2 cups of the kale (reserve 1 cup) and cook until wilted.
Add the chili flakes, Italian seasoning, and garlic powder. Stir.
Add the tomato paste and water. Stir until they mix to form a sauce. Add the pepperoni and stir once more.
Add the reserved kale and season with salt. Stir and quickly remove from heat. Serve with basil and/or oregano, cherry tomatoes, and Parmesan cheese.
