As you’ve probably seen in my recipe for The Best Taco Bowls, spiralized sweet potatoes are awesome! Sweet potato noodles are a versatile substitute for noodles . . . and they just *happen* to be good for you!I personally prefer sweet potato noodles to zucchini noodles (zoodles), because sweet potato noodles hold their shape and take on more flavor. Also, they aren’t soggy. Zoodles are SO soggy, which I personally hate. A simple solution to this is to just eat raw zoodles, but there’s a problem witht that too: I hate raw zucchini. The best solution to the veggie noodle predicament is to just eat sweet potato noodles!
Not only are these Pizza Sweet Potato Noodles flavorful and delicious, but they’re also surprisingly easy to make. They only take a few whole-food ingredients and about twenty minutes to cook up! I used kale in this dish to add some extra nutrients, but you can leave it or substitute your favorite green if you like. You can also add fresh tomatoes and/or basil!
Don’t get mad, but I used cheese in this recipe. Well, not exactly. I put it on top as a garnish, and I think it looks pretty great. Also, you can’t have pizza without cheese (duh). As in any other recipe, cheese is always optional. Although it’s delicious in this recipe, you can leave it off. If you’re lactose-intolerant, it’s better to miss out on a little bit of extra flavor than suffer the unfortunate consequences of dairy consumption . . . 😉
These Pizza Sweet Potato Noodles are also Whole30 if you leave the cheese off and use compliant pepperoni (which is hard to find these days). You can also make them vegan/vegetarian with vegan pepperoni!
