  1. Heat the oil in a skillet (preferably cast-iron) over medium heat for five to ten minutes.* When the oil is shimmering and nearly smoking, it is ready.
  2. Gently crack both eggs into the skillet. Cover with a lid and cook for two to two and a half minutes for runny yolks.
  3. If runny yolks are desired, lift lid and serve eggs with salt and pepper. If solid yolks are desired, remove eggs from heat and leave covered for at least another minute. Serve.
Recipe Notes
  • The skillet will take longer to preheat on an electric cooktop than a gas cooktop.
