Peppermint Chocolate Whoopie Pies (Paleo & Nut-Free)

These peppermint chocolate whoopie pies are soft and sweet, but they’re Paleo and nut-free! You could never tell that they’re not “normal” cookies! They’re perfect for holiday baking!

These are my new favorite cookies.

I mean, come on. Peppermint, chocolate, and cream cheese (use dairy free if needed) are the perfect combination! I am a sucker for all things chocolate & mint. When my friend who’s allergic to nuts said I should do something with these two flavors, I knew she was right! It’s pretty hard to go wrong with chocolate and mint!

It is not hard to go wrong with Paleo baking, however. Coconut flour, which I used in this recipe, is so easy to screw up! Luckily, my first batch of these cookies turned out (almost) perfectly! They were just a little lumpy and misshapen . . . but that didn’t stop me from eating five of them in one evening. #noshame

When I made these for the photoshoot, I also whipped up a peppermint-cream cheese frosting. This stuff is CRACK, you guys. It is so addicting! If you’re lactose-intolerant or just avoiding dairy, go ahead and use dairy-free cream cheese! This coconut cashew “cream cheese” frosting sounds delicious, but it kind of defeats the purpose of making these cookies nut-free. You could whip some coconut cream with peppermint extract instead!

Once you’ve got your frosting, just sandwich it inbetween two cookies and you’re good to go! I recommend making a double (triple?) batch so you have peppermint chocolate whoopie pies for days!

If you add a dusting of chopped chocolate inbetween your two cookies like I did, I don’t think anyone would complain. 😉 More chocolate is ALWAYS a good idea!

Speaking of more chocolate, I read that a few bites a day of dark chocolate (70% or higher) can help lower the stress hormone, cortisol! That’s great for me, because I have finals this week! In fact, they start today . . . eek! I’m really nervous & just excited to get these over with! The sooner these finals are over with, the sooner I can go home and bake cookies. It’s been such a long semester, and I am SO ready for winter break! I’m looking forward to creating some extra-special content for you guys in the next few weeks. Instructions
  1. Preheat the oven to 350 degrees F.
  2. Using a handheld mixer, whip the butter and maple syrup. Add in the egg and mix thoroughly.
  3. Sift in the arrowroot starch, cocoa powder, coconut flour, and baking soda. Mix until smooth, and add in the milk.
  4. Spoon the batter onto a silpat-lined baking sheet. Bake in the preheated oven for 8 minutes.
  5. While the cookies bake, prepare the frosting by whipping all of the ingredients together until smooth and slightly fluffy. The frosting will not be extremely fluffy, but it should be somewhat light.
  6. Allow the baked cookies to cool. Assemble the sandwiches by spreading a dollop of frosting on one cookie and topping with another cookie. Enjoy!
