This Pear & Pomegranate Salad is perfect for holiday gatherings! It’s simple enough to *not* add to your list of stress-inducing holiday to-dos, but it looks fancy enough to make all of your guests think you spent a bunch of time on it.
This salad basically consists of fresh spinach, pears, pomegranate arils, toasted walnuts, and a vinaigrette. It’s very easy to throw together, which I know is a must at this time of year. It’s also super festive thanks to the combination of the green spinach and the red pomegranates! Unlike Christmas cookies, this salad is festive and healthy. Not that cookies aren’t good — I’m eating gluten-free snickerdoodles now. 😉
By the way, happy winter break! Today is my first day off; I finished finals yesterday. It was kind of tough to stay motivated near the end because all I wanted to do was make cookies and sleep . . . but we made it! In case you’re wondering, that’s why I’m posting this recipe late on Friday night, rather than on Monday (when I should have posted it): I was studying for finals!
This semester was probably the toughest I’ve ever had. I know senior year is supposed to be easy, but I ended up taking some very hard classes (I’m looking at you, AP Chem). I also had marching band and cross country . . . and college applications on top of all that. Although I’ve definitely mentioned those things on here before, I thought I might reiterate them as a wrap-up to this semester. I’m kind of fed up with my own complaining, especially because I picked my own schedule. I made this past semester difficult — it wasn’t anyone else’s fault. Next semester, I’m excited to do things besides school. In other words, I won’t let school/homework/stress rule my life anymore.
Back to the salad, because that’s why you’re here! It showcases crisp pears and pomegranates, which are classic winter fruits. If you love winter fruit (which you should, because it’s so delicious), you’ll definitely love this Pear & Pomegranate Salad.
I just realized that this is the first recipe on my website that includes pears! That’s absolutely crazy — I love pears, and I can’t believe I haven’t used them in more recipes! That will change in 2019, don’t worry. 😉
