Paleo & Vegan Chocolate Chip Cookies
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Mix the ground flax and water together in a separate bowl to form a “flax egg.”
  3. Cream the coconut oil and coconut sugar together. Add the molasses and combine thoroughly.
  4. Add the flax egg, salt, and vanilla to the bowl and mix. Beat in the almond flour, coconut flour, and baking soda.
  5. Fold in the chocolate chips and form the dough into 8-12 balls. Bake the balls on a lined cookie sheet in the preheated oven for 8-10 minutes.
  6. Allow the cookies to cool for at least 5 minutes. They are extremely soft at first; they will firm up as they cool down. Enjoy with a glass of (almond) milk!
