Paleo Pumpkin Spice Latte

I know what you’re thinking . . . the world doesn’t need another Pumpkin Spice Latte. They’re overhyped as it is, right? Um, wrong. This Paleo Pumpkin Spice Latte is not your average sugary drink. It’s healthy, easy, and delicious, and it has REAL pumpkin. Starbucks doesn’t use real pumpkin in their PSLs, so we’re already one step ahead of them. 😉 I hope you’re ready for this latte!!

This is one of the best recipes I’ve ever made. I know I say that with every recipe, but it’s especially true for this one because the pumpkin spice latte is such a cozy, quintessential symbol of fall! I don’t actually know if I’ve ever had a real pumpkin spice latte (one from Starbucks, I mean), but I’ve made my own version at least three times since I first tested it. That’s how good it is!

The recipe is super simple, too. I used fresh coffee, almond milk, coconut milk, maple syrup, pureed pumpkin, and pumpkin spice. That’s it! I also topped the lattes with coconut “whipped cream,” which added the perfect indulgent feel to the drink.

Most commercialized versions of the pumpkin spice latte contain far too much sugar and artificial flavors, which obviously isn’t super healthy. This Paleo Pumpkin Spice Latte contains real, all-natural pumpkin and maple syrup. If you like your coffee to be less sweet, you can just add less sweetener! (Funny how that works.)

  1. Heat the almond milk and coconut milk in a small saucepan over medium heat. Add the pumpkin pie spice, maple syrup, and pumpkin puree. Whisk vigorously to combine.
  2. Heat the mixture until it begins steaming. Pour in the coffee and whisk to combine.
  3. Pour the mixture into a cup and top with whipped coconut cream, if desired. Enjoy!

  • This recipe doubles well.
  • *I used full-fat coconut milk from a can & recommend you do the same.
