These Paleo Peppermint Brownies are so good! They don’t even taste gluten-free or Paleo, and they’re super dark and fudgy. These are perfect for the holiday season, since they’re super healthy AND super festive! Plus, they’re a lot healthier than traditional holiday desserts . . . and they’re more affordable than store-bought healthy alternatives! (Have you seen store-bought Paleo baked goods? They’re so expensive!)
I based these brownies off of the recipe for my Brownie-Stuffed Sweet Potatoes. (Remember those abominations I posted back in May? They’re making a comeback.) Those were the best brownies I had ever had in my life besides a) my mom’s brownies from before I went gluten-free and b) the gluten-free boxed brownies from Trader Joe’s. I just tweaked the original recipe a little bit & it turned out really well!
Although you can really use any nut butter in these brownies, I suggest almond butter because it has the most neutral flavor. I once made these brownies with peanut butter, and — don’t get me wrong, they were delicious! — the flavor was noticeable & wouldn’t have paired well with the peppermint in these brownies. Peanut butter + peppermint . . . eh. Cashew butter would also be delicious, but it’s definitely more expensive.
To make these Paleo Peppermint Brownies even more decadent, I put some chocolate on top and swirled it with coconut butter. As you can tell, I’m still not great at making these swirly patterns. What’s harder, AP Chem or cute designs on top of Paleo brownies? You tell me.
Although I mentioned this earlier, I want to reiterate the fact that these brownies are healthy. I mean, they’re less healthy than a salad . . . but only marginally so. 🙂 That means you can eat these without feeling like crap afterwards!
I keep touting the merits of these Paleo Peppermint Brownies, but I want to remind you that all food is good food. Even if it’s not super healthy (looking at you, xmas cookies), it’s still fuel for your body. Also, it’s the holiday season (the holiday season) & that means it’s time to enjoy life and not worry about every little thing we eat! Goodness knows we do that enough during the other 11.5 months out of the year . . .
