  1. Whisk the eggs in a shallow bowl. In a separate shallow bowl, whisk the tapioca four, salt, pepper, garlic, and paprika. Heat a heavy-bottomed pan (such as a cast-iron skillet) over medium heat. Add a generous drizzle of olive oil or desired cooking oil.
  2. Cut the chicken breast into large chunks or cubes. Dip each cube in the egg and then in the flour mixture. Cook the “breaded” chunks for 3-5 minutes per side, until browned on the exterior and cooked all the way through. (A thermometer inserted in the middle should register about 165 degrees Fahrenheit.) Repeat with another batch.
  3. While the chicken cooks, mix all of the sauce ingredients together in a small bowl. Serve the cooked nuggets with the sauce and enjoy!
