Paleo Chicken Nuggets

I used to think that Paleo Chicken Nuggets were just a Paleo “cheat food,” but now that I’ve made them I think differently! These Paleo Chicken Nuggets are versatile, easy, and delicious. They’re super healthy and kid-friendly. They’re also differentiable from the McDonald’s classic (they look and taste healthier!).

I thought Paleo Chicken Nuggets would be similar to Paleo donuts — a new version of an unhealthy food with a new label to make it supposedly “guilt-free.” While I absolutely love Paleo-izing unhealthy foods (I actually did make Paleo donuts), I don’t think they’re the best way to live a Paleo lifestyle. Try classic salads, veggies, and grilled chicken before you break out the foods “with no brakes” (as they say in the Whole30).

Moving forward — let’s talk about these nuggets! They’re super duper easy, and they’re crazy delicious. I dipped them in a mock honey mustard sauce, and it was delicious. I also put paprika in the breading, which sounds a little funky. Trust me, it’s awesome.

These Paleo Chicken Nuggets are a little like Chick-Fil-A nuggets . . . I think. Believe it or not, I went to Chick-Fil-A once before I went gluten-free. Yep, just once! I got a chicken sandwich, but I can’t remember much about it. From what I’ve seen of the chicken nuggets, mine are pretty similar.

I didn’t brine my chicken, but you certainly can if you want. I’ve read about people brining copycat Chick-Fil-A nuggets in pickle juice, but I have no idea how well that works. Just make sure you don’t brine for more than 60 minutes or so, or your chicken might get soggy! (And brine before you cut up your chicken.)

My sister and I ate the entire batch of these nuggets the day we shot them (I bribed her with these nuggets so she’d help me cook). You might eat them all too, especially if you make the sauce.

I might make a batch of these this week. It’s the last week of summer, and we need fun food to mourn/celebrate! I had lentil pasta for lunch today and it was one of the best decisions I’ve made in a while.

Since it is the last week of summer, I’m working on lots of blog stuff and college essays so I can get ahead! It’s going to be a crazy year (I’m taking 6 AP classes), so I want to prepare as much as possible beforehand. I’m also keeping up with my goal of one lifestyle post per month; watch out for a new Weekly Workouts post next week!

Paleo Chicken Nuggets
Instructions
  1. Whisk the eggs in a shallow bowl. In a separate shallow bowl, whisk the tapioca four, salt, pepper, garlic, and paprika. Heat a heavy-bottomed pan (such as a cast-iron skillet) over medium heat. Add a generous drizzle of olive oil or desired cooking oil.
  2. Cut the chicken breast into large chunks or cubes. Dip each cube in the egg and then in the flour mixture. Cook the "breaded" chunks for 3-5 minutes per side, until browned on the exterior and cooked all the way through. (A thermometer inserted in the middle should register about 165 degrees Fahrenheit.) Repeat with another batch.
  3. While the chicken cooks, mix all of the sauce ingredients together in a small bowl. Serve the cooked nuggets with the sauce and enjoy!
