Paleo Bananas Foster French Toast

This Paleo Bananas Foster French Toast is an out-of-this-world Paleo treat! It’s perfect for breakfast, brunch, or even dessert!

Come on. You can’t tell me that this french toast doesn’t sound amazing.

Under normal circumstances, I would also say that you can’t tell me that this french toast is Paleo — because that would be impossible! How could you ever make Paleo french toast, much less Paleo bananas foster french toast?! Um, I’m here to tell you that it is perfectly possible, thanks to Paleo banana bread! You can use whichever banana bread recipe you like, but I made this one from Paleo Gluten Free Eats and it was incredible! Seriously.

Okay, you’re one step closer to breakfast heaven. Next, mix up some butter or ghee with coconut sugar over medium heat. Once the butter and sugar have become super addictive and caramel-y, add some sliced bananas, cinnamon, and a sprinkle of salt. That’s yo’ bananas foster topping . . . which will go on top of some amazing French toast-ified banana bread.

The French toast itself is actually quite simple: the egg bath consists of eggs, maple syrup, cinnamon, coconut milk, sea salt, and rum extract. You could use real rum if you’d like . . . but I’m under 21 and young children read my blog. So rum extract it is!

Sorry, now all I can think about is that one scene from Pirates of the Caribbean where Captain Sparrow repeats “But why is the rum gone?” over and over. Someone could have put all the rum in this bananas foster french toast — they were on a tropical island, after all. Maybe they found some bananas.

But . . . finding almond flour might be tricky. A kitchen would be too, come to think of it. Oh well.

Sorry for the really stupid topics in this blog post. I feel like our conversation isn’t as stimulating as it normally is, you know? That’s probably because I already wrote part of a 1200 word essay, a 1 1/2 page English assignment, and another blog post today. I don’t think I have many words left inside my brain.

Maybe I just need to go eat this bananas foster french toast. That’ll solve all of my problems.

Instructions
  1. Toast banana bread at 350 degrees F for 5 minutes to dry them out slightly, since most Paleo breads are quite moist.
  2. To make the bananas, melt the butter/ghee and coconut sugar in a saucepan over medium heat and stir until dissolved. Add the maple syrup and stir again.
  3. Add the banana slices to the saucepan and cook until soft. Using a heat-proof spatula, scrape most of the bananas into a bowl and place the pan back on the heat (still at medium). Be sure to leave a fair amount of the sugar-butter sauce in the pan.
  4. In a shallow-bottomed bowl, whisk together the eggs, coconut milk, maple syrup, rum extract, cinnamon, and sea salt.
  5. Dredge each slice of banana bread in the egg mixture. Cook each slice in the butter-sugar mixture until the bread is brown and crispy, a few minutes on each side.
  6. Serve the banana bread with the sautéed bananas. Enjoy!
