  1. In a small bowl, whisk together the warm water and honey. Stir in the yeast and let it proof for a few minutes.
  2. While waiting for the yeast, whisk together 1 cup of the almond flour, 3/4 cup of the starch, the xanthan gum, the nutmeg, and the cinnamon.
  3. In another bowl, combine the melted coconut oil, maple syrup, and egg. Once combined, blend with the yeast mixture.
  4. Blend the wet ingredients into the dry ingredients until homogenous, then for 2 additional minutes. Take a two minute break, then blend for another two minutes. A wooden spoon is recommended.
  5. Add the additional 1/4 cup almond flour and 3/8 cup starch. Blend. Cover the dough and allow it to rise in a warm oven for 45-60 minutes.
  6. Combine all the apple ingredients in a bowl. Microwave for 1-2 minutes on full power, until the apples have softened.
  7. Once the dough has risen, add it into a small cast-iron skillet or 8×8 pan (greased with coconut oil!). Pour the apples on top and swirl them into the dough. Bake at a 350 degree F oven for about 25 minutes, or until risen and golden brown. Serve with coconut butter and/or toasted almonds.
