Preheat the oven to 350 degrees Fahrenheit, and line a baking sheet with parchment paper.
Scrub the beets thoroughly. If you like, you may peel them. However, you do not need to for this recipe!
Dice the beets into small cubes (approximately 1 cubic centimeter). Transfer the beets to the baking sheet.
Juice the 1/2 orange directly over the beets. Add the olive oil, salt, and balsamic vinegar. Toss everything together until the beets are evenly coated. Spread the beets out so they lie in an even layer.
Bake the beets in the preheated oven for 60 minutes, or until they are crispy on the edge and soft in the middle.
Serve with orange zest and goat cheese, if desired.
