Most of my meals consist of eggs, in one form or another. Typically, I make eggs and throw them on top of a mix of vegetables or sweet potatoes. This Mexican Cauli-Rice Hash is a variation on that theme, but it looks a lot fancier! It’s actually a very simple recipe, though, so don’t worry! I hope you’re excited to make it, because it is absolutely delicious!
This recipe consists of cauliflower rice (wow, really?!), bell peppers, green chile, tomato sauce, and salsa. I added some sausage and a few extra spices to amp up the flavor, and I topped the whole thing with an egg because DUH! (Why wouldn’t you add an egg . . . unless you’re allergic?)
This Mexican Cauli-Rice Hash is awesome if you’re eating low-carb because it has so many vegetables, you’ll miss all of the starchy carbohydrates! Cauliflower is a pretty common ingredient in low-carb recipes (see my Cauliflower Grits Casserole) for good reason — with some clever cooking, you can make it seem like potatoes! (or bread . . . or whatever they’re turning cauliflower into these days)
I’m so excited about life & stuff right now because I’m on fall break!!!! I’m cooking this break for the first time since AUGUST! I’ve been too busy to cook lately, and it’s a good thing I made up a “surplus” of recipes because otherwise, I might have run out of things to post. 🙁 Luckily, I have a few spare hours this break, and I’m going to spend them whipping up a few new recipes! I’m planning to make some yummy roasted squash, a special chili, and a cool breakfast recipe with this bread.
Also, it has come to my attention that I have only published two pumpkin recipes — ever! I will do my best to remedy that this fall. 🙂 I have three recipes in the works right now, and I’m excited to share them with you all!
