Instructions
  1. Marinate the chicken with the lemon, olive oil, oregano, and garlic for about 30 minutes. Cut up the chicken and cook in a pan until brown and cooked all the way through.
  2. Prepare the lemon-tahini dressing by combining all of the ingredients in a large bowl.
  3. Prepare the cucumber salad by combining all of the ingredients in a large bowl.
  4. Add the mixed greens to a large bowl. Top with a scoop of cauliflower hummus, cucumber salad, the chicken, and a drizzle of dressing. Enjoy!
Recipe Notes

I used my Paleo, Whole30, bean-free Cauliflower Hummus, which is very similar to “real” hummus. If you’d prefer to eat real hummus, feel free!
