Mason Jar Niçoise Salad

This Mason Jar Niçoise Salad is easy, delicious, and perfect for meal prepping! It’s a creative spin on the classic Niçoise Salad — the mason jar simplifies lunches, since it makes the salad easier to transport. This salad is also Whole30 and Paleo! It has green beans, eggs, vegetables, and a lemony vinaigrette!

I did not have high hopes for this salad, but it was surprisingly good! I love potatoes and eggs, so it stands to reason that I would love this salad. My take on Niçoise Salad has a lemon-chive vinaigrette, green beans, tuna, olives, potatoes, eggs, and radishes. If you layer the ingredients correctly, the dressing will stay on the bottom and nothing will get soggy! I did not have room for lettuce in my jar, so I filled a separate container with chopped romaine. At lunchtime, I poured the contents of the jar onto the romaine. Done!

There are a multitude of flavors and textures in this salad! I hate boring salads with a passion, so this is one of my favorites! It has protein, fat, carbs, and (obviously) vegetables, but it also has a ton of flavor. The dressing is perfectly acidic, and it’s the perfect complement to the green beans. The boiled potatoes are not *boring* when combined with the rest of the salad, and the boiled eggs are  . . . well, they aren’t really that special. If you hate boiled eggs, this is not the salad for you. You can’t really have Niçoise salad without boiled eggs. ); I happen to love boiled eggs, so I loved this Mason Jar Niçoise Salad!

As I mentioned last week, my school’s prom was this past Saturday! I went in with pretty low expectations, which left a ton of room for improvement! (haha) I actually had a great time with my friends, but my favorite part was getting ready/eating dinner before the dance. (Does anyone actually like the dance best?)

Instructions
  1. Mix all of the vinaigrette ingredients in the bottom of a clean mason jar.
  2. Pour the green beans on top of the vinaigrette. Then, layer on the tuna, olives, potatoes, eggs, and radishes.
  3. Slice the romaine lettuce into small chunks. When preparing to serve, empty the jar on top of the lettuce and enjoy!
