Mashed Potato Breakfast Bowl
  1. Fill a small pot with water and add salt. Heat the pot over high heat. Scrub the potato
  2. If desired, peel the potato (leaving the peel adds texture). Scrub the potato thoroughly and cut into chunks.
  3. Once the water comes to a boil, add the potato chunks and cook until tender (about 5 minutes). Drain and mash with a fork. Add the salt and coconut oil and mix again. Spread the mashed potatoes into a wide-bottomed bowl.
  4. In a pan, cook the egg (see note). If desired, you may poach or soft-boil the egg. Once the egg is cooked, place it on top of the potatoes.
  5. Dice the bell pepper and saute in the same pan. Add the spinach and cook until slightly wilted. Add the veggies to the top of the potatoes and serve.
