Mashed Potato Breakfast Bowl

This Mashed Potato Breakfast Bowl is so easy and delicious! It’s a great Whole30 meal to start off your day, because it ticks all the boxes — it has carbs, protein, healthy fats (hi egg yolks! You can add avocado too.), and vitamins/nutrients from spinach and bell peppers.

As you can tell from this Plantain Breakfast Bowl, this Sweet Potato Breakfast Bowl, this Granola Berry Breakfast Bowl, and now this Mashed Potato Breakfast Bowl, I’m a little obsessed with . . . um . . . breakfast bowls. I just think food is more fun to eat out of a bowl . . . plates are so 2018!!

The bowl is actually a pretty integral part of this dish. I put the mashed potatoes on the bottom of the bowl and layered the eggs and veggies on top. The sides of the bowl kept everything in and made it neater. If you like making things harder than they have to be, go ahead and use a plate. 😉

On a different note, this is my last first week of a new semester of high school! I’m so excited for graduation and college and all things new . . . in fact, my “word of the year” for 2019 was “change.” I’m graduating, we’re moving, I’m starting college, etc. etc. It’s all going to be a whirlwind, but I’m so excited to see what happens this year!

2018 was a pretty tough year for me due to college apps, super hard classes, etc. However, most of last year’s seniors thought it was a great year. Now that I’m in the same position they were in a year ago, I’m excited to see if 2019 is the best year of MY life, haha.

Back to food, because that’s why you’re here. I’d eat this Mashed Potato Breakfast Bowl every day of the week, since I kind of get into a habit of eating the same foods every day. Right now, I’m obsessed with scrambled eggs with spinach and salsa and potatoes/sweet potatoes on the side. When I posted these Whole30 avocado “toasts” last year, they became my breakfast for about two weeks straight.

  1. Fill a small pot with water and add salt. Heat the pot over high heat. Scrub the potato
  2. If desired, peel the potato (leaving the peel adds texture). Scrub the potato thoroughly and cut into chunks.
  3. Once the water comes to a boil, add the potato chunks and cook until tender (about 5 minutes). Drain and mash with a fork. Add the salt and coconut oil and mix again. Spread the mashed potatoes into a wide-bottomed bowl.
  4. In a pan, cook the egg (see note). If desired, you may poach or soft-boil the egg. Once the egg is cooked, place it on top of the potatoes.
  5. Dice the bell pepper and saute in the same pan. Add the spinach and cook until slightly wilted. Add the veggies to the top of the potatoes and serve.
