Low-Carb Hummus Veggie Wrap
  1. Whisk the egg whites together until they are smooth. Heat a skillet over medium heat and add a little olive oil. Pour in the egg whites and cook until they are set on one side. Flip and cook on the other side.
  2. While the eggs are cooking, make the hummus: Drain the excess water from the cauliflower and blend it with all remaining ingredients except the vegetables.
  3. Spread the cooked egg white “wrap” with hummus and add veggies of choice. Bell peppers, carrots, and radishes are particularly good. Roll up the wrap and enjoy!
