Kale Slaw

Vegan “Parmesan”
Instructions
  1. Mix all of the kale slaw ingredients in a large bowl. Massage the kale gently to soften it. Cover the slaw and set aside to soften and marinate a little more.
  2. Poach two eggs according to your desired method.
  3. Add all of the Vegan “Parmesan” ingredients to a blender. Pulse the ingredients until they are homogeneous, but still a little coarse.
  4. To assemble the salad, spread half of the hummus on the side of a bowl. Add in half of the kale slaw, top with one poached egg, and sprinkle on the Vegan “Parmesan.” Repeat steps with the remaining ingredients to make a second serving.
