This Hummus, Kale, & Poached Egg Salad is so delicious! It is Paleo, Whole30, and vegetarian, but you wouldn’t know it! My favorite part of this salad is the vegan “Parmesan cheese,” which I made with walnuts and nutritional yeast. I also love the poached egg on top — the runny yolk creates a kind of dressing that ties the whole salad together!
The base of this Hummus, Kale, & Poached Egg Salad is, well, kale (and purple cabbage). I massaged the kale with apple cider vinegar, olive oil, and salt to soften it. I did this in my Rosemary Roasted Sweet Potato & Broccoli Kale Salad too . . . can you tell I’m a bit obsessed with kale salads at the moment?

OH! I just remembered the other part of this salad that is SO AMAZING! There’s a smear of hummus on the side of the bowl! Low-key kinda forgot about it until now, when I saw it in the photo above. Well, that’s embarrassing.
But yeah, the hummus is the second-best part of this salad. (The first-best is the vegan Parmesan, because that stuff is addicting. Try it on a spoonful of hummus! . . . you can thank me later, ha ha.) I love having the hummus on the side of the bowl, because it looks very artsy-retro-abstract vibe (think Picasso, because of course this salad is a work of art).
If you took the egg off of this Hummus, Kale, & Poached Egg Salad, it would be vegan . . . but that kind of defeats the point of it being a “Poached Egg Salad.” Also, the poached egg is the third best thing about the whole dish! (Remember, Parmesan first and hummus second.) You can’t just take it off! I am so obsessed with eggs, it’s not even funny. Well, it’s kinda funny. I have to limit myself to 2-3 eggs per day, otherwise I will eat them for every single meal!
But can you blame me, with a meal like this? It’s full of veggies too, so we can really get all our nutrients in! There’s nothing bad to be said about a salad, ever, because you can’t get much healthier than a bowl of leaves and other plants! I guess the only bad thing you could say is that salads might taste nasty, but don’t worry! I’ve eaten many salads in my life, and this is definitely one of the best.
I’m not just saying that because it’s my recipe. (But you should make it anyway!)
