Because I’ve been eating this recipe for years, I finally decided to share it with you! I love making this for an easy lunch. It’s perfect to prep the night before, since it only takes ten minutes to whip up (5 if you’re fast)! This Guacamole Tuna Salad is also low-carb — it has a ton of protein and healthy fat from the tuna and avocado. Tuna is FULL of protein, and it’s a favorite in our family for pre-workout fuel.

This Guacamole Tuna Salad is healthy (duh), but it’s also DELICIOUS! Imagine spicy, flavorful, creamy guacamole mashed up with protein-packed tuna and flavorful cilantro. That’s this dish in a nutshell. Although I’ve never tried this variation, I bet it would be delicious with chips . . . and maybe some salsa on top!

Something about the green-ness of this dish makes me think about springtime. Does anyone else get that feeling? Spring is pretty much coming to a close where I live, since temperatures are already creeping way too high. It was 95 degrees the other day! In that kind of heat, I don’t even want to venture outside, much less warm up my cool house with a hot oven. Thankfully, this Guacamole Tuna Salad is spring/summer-friendly because it doesn’t need the oven! Just make sure to keep your finished salad in the fridge, because it doesn’t smell good when it’s warm. Tuna + avocado + hot sun = no bueño.

This tuna salad is special because it doesn’t have any mayo! It also has fresh green bell pepper and red onion, which add delicious flavor and a lovely crunch! You can adjust the heat depending on your personal spice tolerance. Mine is pretty high (if I do say so myself, ha ha), so I normally add some extra cayenne and/or red pepper flakes. Feel free to adjust my recipe to your needs! I kind of think the cilantro is a must, though. If you’re a cilantro hater, well, we just can’t be friends. 😉

Happy Monday! I hope you all have a week full of productivity, happiness, and relaxation. This is my last full week of school, and I am SO PUMPED for summer! I have about one week of freedom between the end of school and the beginning of work, so I’ll probably take a few days to cook up a storm. I’m excited for the days when all I have to worry about is the texture of my nut-free baked good or the composition of a new photo, versus the five projects that I have to finish in a week and a half . . . eek!!

Instructions
  1. Mash the avocado with all ingredients except for the onion, bell pepper, tuna, salt, pepper, and cilantro to desired smoothness.
  2. Stir in the bell pepper and red onion.
  3. Add the tuna and mix. Add the salt and season with pepper to taste. Adjust seasonings to taste. Enjoy!
