This is one of my favorite recipes to date! I know I say that with every recipe, but it’s so true! These grilled vegetables are delicious and crispy on their own, but they’re over the top when paired with the addicting avocado-lime sauce. I couldn’t think of an easier summer lunch or side dish, especially for vegans. These Grilled Vegetables with Avocado-Lime Sauce are also Whole30 . . . which means veggies and dip all around!
In case you hadn’t noticed by now, I’m *a little* obsessed with sweet potatoes. Even if you’re not a frequent reader, you can tell by the name of my blog that I love sweet potatoes. I guess we could call this dish a compromise, because I cut the sweet potatoes with cauliflower — so it’s half-and-half.
The real star of the show is the avocado-lime sauce, though. This sauce is EVERYTHING. I’ve wanted to make an avocado sauce for ages, but I never got around to it until I made this recipe. It contains almost half a bunch of cilantro, stems and all. Whether you’re a cilantro hater or lover, I promise you’ll love this sauce! I loooove cilantro, but my sister and German exchange student hate it. They both sampled this recipe and, like me, couldn’t stop eating it! It tastes kind of Mexican, but also kind of tropical . . . I don’t really know what to call it, so I’m just going to say it’s plain delicious.
