Can we all agree that avocado is the greatest thing since sliced bread?

Actually, I would say that avocado is better than sliced bread. We don’t really eat much bread around here . . . but we do eat plenty of avocado! Of course, avocado is all the rage right now. People are putting it on everything from tacos to toast! Of course, we (as paleo eaters) have to come up with some more creative ways to eat avocado, since traditional tacos and toast are taboo. My solution to this problem is to make these Grilled Avocado Burger Boats!

Grilling avocados sounds a little weird, I know. Trust me on this! The grilling process makes the flesh of the avocado even creamier, while the skin gets a little crispy and grill-marked. <– Grill marks on avocado?? Yum! Don’t you think things just taste better with grill marks on them? As if grill marks weren’t enough, we’re loading these babies up with smoky-sweet chipotle burger sliders (wait, vegan/vegetarian friends! I have an option for you!!), mustard, lettuce, and tomato! pssst . . . you could totally add some cheese if you wanted to . . . I won’t tell!

I’d suggest serving these as a light dinner or lunch, but you could definitely use them as a side or an appetizer too! Oh, and the actual slider recipe is so good — I’d make a double batch if I were you! They’re delicious, spicy, and flavorful!

Instructions
  1. Preheat grill to 500 degrees F.
  2. Prepare sliders by combining all ingredients thoroughly in a large bowl. Form six patties.
  3. Carefully halve an avocado and remove the pit. Repeat with the other two avocados. Drizzle each half with olive oil and sprinkle with salt.
  4. Cook the sliders and the avocados on the grill for 3-5 minutes per side, until the sliders' juices run clear the and the avocados' flesh is soft and blackened.
  5. Assemble the burger boats by placing one slider in each boat. Top with assorted toppings of choice.
Recipe Notes
  • For a vegan version, toss 6 ounces of cooked chickpeas with the burger seasonings. Bake them in the oven at 450 degrees F for about 30 minutes, until crispy. Stuff your avocado with the chickpeas instead of meat!
