Granola Berry Breakfast Bowl (Vegan)
  1. Preheat the oven to 300 degrees Fahrenheit. In a large mixing bowl, combine the flaxseed and water. Wait 5 minutes to let the flax soak.
  2. Melt the coconut oil and mix with the maple syrup. Once it is smooth, add the flax egg and shredded apple. Mix thoroughly and add salt, cinnamon, peanut butter, and chia seeds.
  3. Add the coconut, almonds, walnuts, and sunflower seeds. Fold until the mixture is completely smooth. Spread onto a baking sheet lined with parchment or something with a similar function (anti-sticking) and bake in the preheated oven for 30 minutes.
  4. Serve in a bowl with fresh strawberries, blueberries, cherries, and/or raspberries. Add an extra drizzle of nut butter and add almond milk. Enjoy!
