Granola Berry Breakfast Bowl (Vegan)

This Vegan Granola Berry Breakfast Bowl is one of my favorite recipes! Since normal granola isn’t Paleo, I made my own version last summer and then adapted it for this recipe! This granola is perfect when paired with berries, nut butter, and almond milk. It’s a delicious vegan breakfast, and it’s conveniently portable!

This post is going up late because my life has been pretty hectic! My course load is a bit heavier than I anticipated. I didn’t have any time to prep posts last weekend, so I wrote this one during the week. In fact, this will be the only blog post that goes up this week; I have a big exam this week, rehearsal on Thursday, and a meet on Saturday. Rest assured, I have next Monday off for Labor Day & I’ll take a few hours to prep posts ahead of time. Nevertheless, you can expect fewer blog posts this semester. 🙁

Back to this Granola Berry Breakfast Bowl, since what’s that you really came here to read about! I based this recipe off my old recipe for Paleo Coconut Granola, but I added a bit of nut butter and changed some ratios to make it even better. This is just like vegan muesli with fruit, but it’s grain-free and refined sugar-free. I don’t know about you guys, but I go wild for cute foods like granola bowls and fruity vegan things, even though I’m generally not vegan & I definitely don’t eat oats.

–> Side note: A few weeks ago, I ate some Cheerios while I was out of town because they were gluten-free (and, um, delicious), thinking I’d be able to digest them . . . but I had stomachaches all day!! Moral of the story — oats definitely don’t work for my stomach. I’ve made Paleo Granola, so now maybe I’ll try to make Paleo Cheerios. Those might be disastrous, but they sound fun to make.

Rest assured, this Granola Berry Breakfast Bowl contains NO grains (just nuts — which can also really upset your stomach if you’re sensitive to them. I suggest substituting seeds (sunflower, pumpkin, sesame, etc.) and coconut for the nuts). If you like yogurt with granola, I’m sure coconut yogurt or almond milk yogurt would be delicious! Whatever you do with this granola, it will be delicious . . . unless, of course, you use something like kombucha instead of almond milk or shredded zucchini instead of shredded apple. However, I know for a fact that you’re all smart cookies & you won’t make those rookie mistakes! 😉

  1. Preheat the oven to 300 degrees Fahrenheit. In a large mixing bowl, combine the flaxseed and water. Wait 5 minutes to let the flax soak.
  2. Melt the coconut oil and mix with the maple syrup. Once it is smooth, add the flax egg and shredded apple. Mix thoroughly and add salt, cinnamon, peanut butter, and chia seeds.
  3. Add the coconut, almonds, walnuts, and sunflower seeds. Fold until the mixture is completely smooth. Spread onto a baking sheet lined with parchment or something with a similar function (anti-sticking) and bake in the preheated oven for 30 minutes.
  4. Serve in a bowl with fresh strawberries, blueberries, cherries, and/or raspberries. Add an extra drizzle of nut butter and add almond milk. Enjoy!
