This yummy Italian Pasta Salad is delicious, easy, and grain-free! It has lentil pasta, fresh herbs, and crunchy veggies. A delicious pesto vinaigrette ties it all together and makes this dish extra addicting.
I love this Italian Pasta Salad, especially for barbecues and summer get-togethers! It’s the perfect side dish for July 4th . . . or really any summer party. It’s super simple, so you don’t need to stress out about putting it together. If you’re quick, you can probably throw it together in ten minutes or less (excluding time for the pasta to cook).
I used red lentil sedanini from Trader Joe’s in this recipe, and it was perfect! In my experience, gluten-free grain pasta becomes very grainy once it gets cold. This lentil pasta doesn’t! The texture isn’t quite as good as normal wheat pasta (from what I can remember), but it’s pretty great. This pasta is perfect hot, too. I suggest mixing it with marinara sauce and spinach! If you ever have a pasta craving but don’t want to eat grains, this sedanini is perfect.

The fresh veggies in this salad add the perfect amount of texture and flavor! The pesto dressing is awesome, too. I recommend making the dressing while the pasta cooks. Then, add the dressing to the hot (drained, of course) pasta. That way, the pasta will absorb more of the oil and flavor.
I made this for our Father’s Day barbecue a few weeks ago, and everyone loved it! I loved the fact that it only took 15-20 minutes to put together. Maximum flavor for minimum effort! 😉
This Italian Pasta Salad isn’t technically Paleo, but it is gluten-free, grain-free, dairy-free, and nut-free. If you’d like to avoid legumes, you can use an equivalent amount of any other pasta. I would suggest a pasta that lends itself well to, um, pasta salad . . . in other words, don’t use angel hair!
I know there are Paleo pastas out there, but I’ve never tried them. Paleo pasta is so expensive, and I think it’s more worthwhile to buy gluten-free lentil pasta (or brown rice pasta), since it doesn’t bother my stomach.
