  1. Combine the coconut sugar, salt, vanilla extract, and 1/4 cup of the coconut milk ina saucepan. Whisk until smooth and bring to a boil over medium-high heat. Keep it at a boil for three minutes.
  2. Reduce the heat to low, add the spices, and cook for 5 minutes.
  3. Add the almond milk and remaining 1/2 cup of coconut milk to the pan. Whisk until the caramel is completely incorporated and simmer for about 5 minutes.
  4. Add the strong coffee. Divide the latte between two mugs and top with whipped cream and/or a sprinkle of cinnamon and coconut sugar. Enjoy!
